SUPER Salad! Day 16!!

Today is salad day! It was an especially good day for me!! I not only did well on my dishes, but...
We revived our midterm grades this morning! Turns out, yours truly has the highest grade in the class! :) I have a very hard earned 96% for the time being...Lets hope I can keep that up! Anyways...enough about me...and more about the food! (Lets face it, you are all here to read about the magnificent food, not talk about what an over achiever I am :)) ). Like I said earlier, today was salad day. We made 3 different salads today: The Nicoise, White Bean Salad, and Leeks with Vinaigrette. I started off with my Nicoise Salad. This is a very fancy tuna salad consisting of salad greens topped with hard boiled eggs, boiled potato slices, tomato wedges, black olives, green beans, anchovies, fresh chives, and a drizzle of vinaigrette. I am not a huge fan of anchovies, but I have to say I enjoyed every bite of this salad! The hardest part was cooking the potatoes and eggs...which was quite easy! Chef said "I had a great presentation and it tasted wonderful."

Moving on to salad number two...the White bean salad...This salad was also very easy. It is made of white beans, sliced green olives, minced red onions, parsley, canned pimento, and vinaigrette. I like this salad because it was very colorful! As an artist, I loved playing with the design of this plate! Once I was happy with my masterpiece on a plate I turned it in....Chef also liked it!

Onto my final dish of the day! Leeks with vinaigrette  For those of you who haven't had the pleasure of eating a leek...the best way I can describe it is like a very big green onion. Green onions happen to be a personal favorite of mine so I enjoyed this salad as well. To prepare this dish I had to boil my leeks until they were tender and then throw them in my vinaigrette. Once finished, I plated them with some crumbled hard boiled eggs and fresh chives. Chef enjoyed my salad, but told me I needed to "boil my leeks a little bit longer." I had never boiled a leek before so I was afraid of over cooking it...which was not the case! All and all today was a fabulous day! Before we started our clean up, we got to prepare our pasta dough for tomorrow...PASTA DAY!! I cannot wait!! :)
